Going Back To Where I Started........... Kinda

It sounds like you are running into dynamic stability issues. At some point there is a max vel where a bullet will become unstable and start tumbling. Takes a degree in rocket science to understand this stuff and I don't think they do either. They have to try it and see what happens just like the rest of us.
Ever try sticking the bullet in backwards? Put the heavy end forward should solve stability problems. Still Might not shoot great.
 
Gentlemen, I had an old friend that would put the bullets in backwards to shoot turkeys in the South Dakota Black Hills. He said the bullets would not tear them up as much but the were not very accurate beyond about 100 yards. Also he had to load them down by about 10 % of his standard load.

Guessing going through multiple Mach numbers introduces disturbances? Most rifle shooting happens in the Mach 2-3 window (~2200-3300 fps) with some documented disturbances in the transonic to subsonic regions around Mach 1.2 (~1300 fps and less). Pushing into the Mach 4 window (~4400 fps+) usually requires a pretty light (draggy) bullet. Running a 51g AH at 4800 looks to be pushing it into that Mach 4 window right at 100 yards where most folks would be doing their accuracy test.
