For hunting purposes shots from 500-800 what bullet would you go with i will narrow this down to a fast 284 cal so 195 berger or 177 hammer. Ready? Go.

You need to shoot them both and see what your rifle likes best. I have on rifle that shoots the Hammers unbelievable and another that just does not like the Hammers too well.
I haven't personally shot Hammers so I can't comment beyond saying that I have read an awful lot of good reviews of both their accuracy and on-game performance. I have quite a bit of experience with Berger. I have found them to be very accurate and as long as the tip is not plugged, devastating on critters both small and large. YMMV, so my advice is to try whatever you want, and use whatever shoots the best out of your rig.
I have, love, and shoot both. I'm late to the hammer club but am now a believer. Odds are good your could get a load where both would shoot great. If you're seriously choosing between the 2, the choice is down to what terminal performance you want out of the bullet.
I have shot both those bullets in my 28 Nosler for three maybe four years, like them both, one shot kills, accurate and mess up core of everything I've put them on.
Everything I hit with a 7mm 180 Berger VLD hunting bullet was down hard or didn't go far. However, bone is difficult to punch through and the bullet frags quite violently. Those frags end up in the strangest places and bullet trajectory goes way off course, especially on quartering, but completely doable hits.
So I would opt for the Hammer since that is your other choice.
