I have a Remington 700 sendero in 7 rum and I was wanting to use the action to build something what would be a good cartridge to choose that would feed well in this action and I can buy factory ammo for. I like the idea of 28 nosler or 300 prc.

I would do 7mm Rem Mag with an 8 twist. Factory ammo has a wide variety of options for anything short of DG in Africa. If you handload, the 700 mag box has plenty of room for seating longer bullets. You are basically copying the 7PRC but with slightly more powder room. The 28NOS is on its way out so I would skip that. I think the 300PRC is a good way to go too. I just prefer a 7mm to a 30cal. No matter what you choose, get a threaded barrel for a good suppressor.

I would go with Any of the NOSLER cartridges. My favorite is 26, 27, 28 and 30....

I love the rum but I just can't find much factory ammo and I don't reload
You could consider having a small "boutique" reloader load custom ammunition for you. I am super satisfied with the work Aaron has done for me. I was introduced to him by a friend from our church group that met him at a local gun show in WNY. The 7 RUM is not one of his "regular" options, so give him a call. If he asks, tell him Michael referred you.

Seems like a reasonable "idea".

If the Sendero is in good condition and since you don't reload, I would sell the Sendero and buy a custom in the caliber that you like and has ammo readily available. Buying factory 7mm mag or 300 wm ammo would help pay for the difference.
The Sendero seems to be bringing a premium price at this time.

Midway has some options in stock at present for 7rum.
It's all your decision here. The Sendero is a good rifle, but hanging another barrel on it will probably be north of 1K without much for other custom stuff. It all depends on how deep your toybox fund is, I guess.
The 28 nos and 7rum are very close; in fact my 7rum barrel was at 1 time a 28nos bbl.. By brother gave me a takeoff Brux (he went to 33nos) in 28. I had a bunch of brass and a set of dies in 7rum so I had my 'smith shorten the bbl. a bit to get a clean chamber and recut her to 7rum. My existing 7rum was shot out so I needed the barrel. This rifle's been a hammer on mule deer with 175 eld-x bullets.

How many shots/year? For your consideration:

1. Have a trusted friend load for you.
2. There are companies other than the well-known ammo companies that also do custom loads. For instance, https://choiceammunition.com/?s=7+mm+rum&post_type=product

ADDED:

- https://hsmammunition.com/trophy-gold/

☝️ I think option #2 is your easy button, no need to complicate it unnecessarily.👆
