I have a new rem 700 that I'm thinking about taking the barrel off and putting a prefit barrel on it with barrel nut. I'm wondering Has anyone done with with out getting the action trued? If so how did it shoot? Or do I need to get it trued first? I will either do a 6.5 prc or 300 prc

If it shot well before, it will likely shoot better with a premium barrel replacing a factory. But you'll always wonder, "What if....?"

Well, I always blueprint them when the barrel comes off, less than an hour in it once set up.

You don't have to go all hog, you can just face the lug recesses, the bolt lugs and front face without screwing with the threads.
The last 5 I have customised have been very good. All have had RR serial numbers too.
I swap out the bolts for PT&G one piece bolts normally.

Cheers.
