How do you like deer sausage? Hot or mild?

Due to a couple of gout attacks, I don't eat much red meat! 😖
BUT.....
When I made my own sausage, I want it sassy!
I don't want to have to fight my food!
I want just enough "heat" that after the bite and chew, it dawns on you, "That's spicy!"

First batch of venison sausage I made, my kids were 5 and 7. For a breakfast sausage, it WAS a bit spicy. 🔥
When I'd cook it, the kids would come by, grab a patty and say, "Not so much pepper next time, Dad!" ...as they grabbed the second patty!
The two of them would probably eat half a pound, complaining the whole time!
I've battled gout for over half my life. I take allopurinol every day and colchicine when I feel a gout attack coming. <knock on wood> I haven't had an attack in over 4 years. If I go out and splurge on a nice Ribeye or eat a bunch of shrimp, I pop two colchicine before going to bed and one in the morning. Works like a charm.
 
In general I may agree, especially since you spice everything to your own taste. And you are good at it.
But my wife makes a meat loaf that is one part spicy hot venison sausage and two parts ground venison. It makes a slightly spicy meat loaf that is good enough to kill for!

L😍L! I made a similar meatloaf (elk) a couple of days ago; it's what I had for lunch today.
 
Mild or spicy…don't matter…pan fry the links cut in about 2" lengths and then dip in homemade cane syrup with some homemade., made from scratch cathead biscuits… cheese grits, bacon and toast….

Reading this thread got me hungry 😋
