Due to a couple of gout attacks, I don't eat much red meat!

BUT.....
When I made my own sausage, I want it sassy!
I don't want to have to fight my food!
I want just enough "heat" that after the bite and chew, it dawns on you, "That's spicy!"
First batch of venison sausage I made, my kids were 5 and 7. For a breakfast sausage, it WAS a bit spicy.

When I'd cook it, the kids would come by, grab a patty and say, "Not so much pepper next time, Dad!" ...as they grabbed the second patty!
The two of them would probably eat half a pound, complaining the whole time!
