How do you like deer sausage? Hot or mild?

My Pops had some made at the Italian grocery after hours. They were known for all varieties of Italian plus Polish, sometimes Chorizo and Brats. Cajun ?
He brought home a batch that was a Major League Hit. Second batch was not the same.
One was half and half pork/ venison another was a different ratio. Wish I knew. Not spicy.
 
I make my own, medium hot Italian sausage or maple syrup and brown sugar breakfast sausage. I do it up as Paddys or in natural casings. I add a little pork shoulder with fat to the mix or, if I've been to South Carolina that year, I substitute pork for boar

Years ago, I put on a game dinner with about 300 to 500 attending at my local VFW each year. In the last 10 or 15 years, I have pared that down to about a dozen at my house. We've had everything from raccoon casserole to lion.
 
Due to a couple of gout attacks, I don't eat much red meat! 😖
BUT.....
When I made my own sausage, I want it sassy!
I don't want to have to fight my food!
I want just enough "heat" that after the bite and chew, it dawns on you, "That's spicy!"

First batch of venison sausage I made, my kids were 5 and 7. For a breakfast sausage, it WAS a bit spicy. 🔥
When I'd cook it, the kids would come by, grab a patty and say, "Not so much pepper next time, Dad!" ...as they grabbed the second patty!
The two of them would probably eat half a pound, complaining the whole time!

I'm a hot guy however, the mild (at least at my processor) has a better flavor. When I'm cooking in bulk, I like to mix a couple pounds of venison with a 16oz chub of Tennessee Pride pork sausage. A couple of pre-made patties makes a great mid-day snack for me since I've been skipping breakfast and lunch.
