The 6.5 PRC is right in the wheelhouse for sub 500 yd deer rifle with low recoil and muzzle blast. 7 PRC would be better for "out west" long range on bigger critters...both great cartridges though.

A hunting rifle!
I had a b14 wilderness right after they first came out in 6.5prc, back when you couldn't find factory ammo and I loaded Berger 156gr with h1000 and it was very accurate, only reason I sold it was because I took a guy hunting and he killed his first deer with it and wore me down about buying it until I sold it to him

Enough for elk at what distance though? I shot one at 620 yards last season in Co. Would do it at that distance with 7 PRC, but would not try it with 6.5 PRC. Just not enough energy. I took it with a 300 win mag.
It won't be my elk rifle. At minimum my elk rifles are at east going to start with 7. Taking my 300Win mag Benelli Lupo this year to Wyoming.

I've just been googling a 7-6.5PRC.
Split the difference of your choices perfectly and you're a smith so the hard part (throating) is easy.
Uses your 6.5prc brass but gets you a nice shootable easy (er) on throat round.
Folks report 2900fps ish with 175s out of a 24" barrel. Maybe 100fps behind a 7PRC with 10g less powder.

Just came from the F class Canadian nationals - guys there are really running 2825-2850 fps with a 30 inch and 180 Bergers From there 7-6.5 PRCs . You will have to run it HARDI've just been googling a 7-6.5PRC.

Control group size of 1 doesn't give much data. Especially with no load info or where the shot landed and game position.
If guys are taking elk with a 6.5CM @ 800+ w. 140-147s...the 6.5PRC pushing a 156 is more than up to the task.
People have been using the 6.5x55 for 100+ years on moose and red stag. Far less gun than the 6.5PRC.
However...For me, I have plenty of rifles in 7mm and 308 chamberings, that I would opt for one on an elk hunt as well. But if I only had one rifle, and it was in 6.5PRC, I would have no problem using it on elk. I have been on plenty of hunts with a .270Win shooting 140s to know they kill elk just fine out to 500+.

I know you said Bergara, and I do like their rifles, and I am limited on factory rifles because I only shoot left handed bolt guns. The Tikka in 6.5 PRC is probably my second most accurate rifle I own, and that includes customs. $15 spring from Midway, and the trigger is a sweet crisp two pounds, and right out of the box that thing has shot lights out.
I'm only looking at one because of having a gift card for BPI, which owns CVA and Bergara. I have a few tikkas and think they are great rifles.
