I have a Christensen Arms 7mm Mag rifle with steel barrel. I am wanting to sit my bullets out further and was wondering what's the best option? Should I just throat is using a uni-throater or re-cut the chamber with a .188" reamer?

This is what I always have done, just order a throater with either standard throat angles or your own…

Are you DIY with a lathe (I use a throater with an adapter for my micrometer reamer stop/floating holder), if not rent the uni-throater from 4D. If you've not done this before, be VERY careful. You're only cutting roughly .003 per side- the reamer will cut like a hot knife through butter; go too far and it's off to the smith to set back and deepen the chamber.
I assume you've checked this with a comparator and modified case (as well as your mag length limitation)- what bullet are you using where you need more freebore?
