Brisket in an Egg smoker

I've cooked a few briskets on my Primo Oval. Very similar to the Green Egg. They turn out really good. I do want to buy a controller to see how it works. On a 12-16 hr cook the Primo is actually very good at holding a steady temperature.
 
2 1/2" Chuck eye thick steak 700º sear after 24hr sous vide @ 130º

Cheap easy meal with good texture and awesome flavor. Make sure it is heavily marbled.

Smoked garlic, fire roasted sea salt/cayenne blend and some smokehouse cracked black pepper
