what should i use to finish my stock

Is there a special product for finishing stocks or can I use varithane or something

Tru-oil is what a lot of folks use. It's from Birchwood Casey and is easy to apply.

I like True oil or Tung oil for hand rubbed finishes.

It takes some work but the end results are well worth it.

I use xxxx steel wool to apply it and 8 to 10 coats waiting for each coat to dry before applying
the next.

Hand rubbed finishes are beautiful and durable.

If you like the glossy finishes Permalyn works well and you can buy both at Brownells.

The oil or urethane finishes are certainly nice finishes when applied correctly.
One thing to keep in mind is that they will "amber" or change the colors of your stock to appear yellow. That's fine if you want to warm it up a bit. If you want to preserve the colors, then I would suggest a "clear" finish like Polycrylic which is made by Minwax. I believe Deft makes a Spar finish that is also clear.
You mentioned that you want it to be matte. You can get these clear finishes in a spray matte.
