H1000 will be better for the heavy for caliber bullets 200hr +
H4831 was/ is the go to powder for 300 with 180gr. 180 use to be considered heavy for caliber before the high BC long range got popular. It is still a great choice.
For 200 AB it's Likely to be a wash between the 2, maybe a touch more velocity from 1000
