270 Winchester, 6.5-06, or 25-06 Fast Twist Deer Rifle

Unless he changed his mind and missed it, the OP is not looking for alternatives but rather opinions on what he listed.
6mm Gay Tiger. Sorry I couldn't resist lol. I looked up what LR bullets were available on Cabela's Canada it's very limited. 6mm, 6.5mm, and 7mm gave him the best options. So out of the three his current option would probably have to be the 6.5-06.......... GT. If Matrix ever starts getting back into the game then maybe the 270 Win could be added. Or if other suppliers have bullets on hand then there's that.

I get 3199 with the 133 with a very moderate load of H1000 in my 26" 25SST. I got up to 3350 with the 131BJ w. H1000. And 3300 with the 135 & RL23.

My .25-06AI was pushing a 115 HVLD @ 3450, and 100 TTSX @ 3600.

.257Wby should easily get 3300.

25-06ai 133@ 3200fps- (500yds, 2453 fps, 1978 ftlbs) (1000yds, 1812 fps, 970 ftlbs)

I ran some numbers using Lance's data. So assuming most deer are shot inside of 500 yards, the 25-06ai has the most energy that far out. And for target shooting it's the flattest at a thousand yards. All done with less recoil than the other two options. And as stated, you have bigger cartridges for heavier work. If you don't want the AI versions I'm sure the same will apply just scaled down a little.
 
I say do a fast twist 25 Caliber. My 25-284 is so much fun to shoot with the 131 BJ. I haven't looked for reloading components for awhile but there's way more places to buy stuff than at Cabelas in Canada. Can't remember the last bullet or powder I bought at cabelas. I'm sure the OP knows of other vendors in Canada. Or I hope he does.

With a 200Y zero at my range altitude of 3300', the KE favors the .270 AI (2103 FT-LBS) vs. .25-06 AI (1906 FT-LBS) at 500Y. Cheers!

Yeah, I just used the default numbers on the Berger ballistic calculator and then grabbed the midpoint and endpoint. It looks like thinner air makes a little difference. But I think my point still holds. With my numbers it was basically a dead heat, just depends on the atmospherics. Either way the 25 06 still has plenty of energy to Kill a deer as far as most people would shoot. So as long as you have a different rifle for elk and bigger game why not avoid or recoil and be able to spot your impacts more easily.
 
While i dont have much experience with either the 25-06 or the .257 weatherby they are both capable cartridges and they don't have much recoil. Bullets range from 75-133gr load light for predators and heavy for large deer ect. sounds like a do all caliber to me.
