Anyone able to inform me where I can find some info on what the optimal bullet weight is for a 308 with a 1:12 twist?

Berger Bullets lists the "recomended" twist rates for all of their bullets on the web site.

with high BC type bullets you'd be best in the 180-190 range if twist was your main concern.
