I know every gun "likes" different powders and loads, but what would be the powders best fit for the following calibers? Is there one or two that would work in all? H1000? Retumbo?

I would go to reloading manuals and cross-check with preferred powders.

I'd have to also agree based on the current market situation. I don't foresee powder availability getting better in the future and the main goal will shift to something that just works safely. Searching for an optimum powder will be a thing of the past.

imr4831 works for me in multiple cartridges

Not really. Any H powder are far better because heat sensitivity by better than 50% per degree change in temp .
