Honest question, why not use this device that levels in a similar fashion. Uses the wedges to square the bottom of the scope to the picatinny.
For me, it's quick and easy.

Because I can use it to get the level done aswell and measure sight height

But, I could be off maybe as much as 1/8" or more on measurement Since it would be guessing the center of either. Does being off that much matter?

Somewhere I have a chart, that with the use of pennies and a plumb bob can do it all. Moa rings or 1 piece moa sled. Get the height needed for rings or height of sled and amount of moa by number of pennies added front or back.

With the one piece mount being used in the video, there is no picatinny underneath the scope.
