I watched a video in which they were talking about a new press that has a floating shell holder that allows the case to move into perfect alignment with the dies. It seems like if this was a good idea there would be aftermarket versions available. Is this a thing?

Yes, it's how the Forster Co-Ax works. The new Area 419 Zero uses a disc instead of a shellholder with seating dies for the same effect. Whidden makes a floating toolhead for the Dillon 550/650s that achieves the same effect as floating the casehead by floating the dies themselves.
