Elk Tenderloin quick easy and delicious

suitable for home and or camp

1.Kill a really nice bull or cow
2. get yourself a tenderloin

if it is a cow you are really in luck

skin the lining off

cut a hunk preferably from the bigger end, this is slightly choicer than the thinner end

leave whole and marinate in salt pepper cumin and rosemary or sage and COFFEE preferably left over from breakfast(cowboy coffee is ideal with the grounds from the camp pot)
pour in beer or wine as available

let sit in the cooler all day until night time(ziplocs in the yeti work great for this)

cook to taste rarer is always better but medium rare works

if home,
cook at 400 until a char forms and remove from overn after 20-25 minutes(according to size)
slice into 1" or thicker steaks and enjoy
believe it or note box mashed potatoes with milk or cream and loads of garlic make a nice side
easy to carry in camp and weighs nothing
you can do real potatoes at home after the kids peel them for you
 
the coffee is a new one on me......have to try that........use cowboy coffee to clean really gunk up cast iron........boiling it cuts through dried gravy faster than water......
