I've enjoyed this thread. Lots of experience. Bullets do funny things sometime….as do critters. Accordingly, I look for what will work in most circumstance. I've searched for the holy grail of bullets in a number of cartridges over the years (for the ranges I typically hunt). I've found it only a couple times (210 PT in a 340wby/338 is an example). I shoot both a 270win and a 270wsm. For whitetails and mule deer, I like 140 Accubonds in the wsm(3200fps) and 130 Hornady Interlocs in the 270(3100)fps. The Accubonds are both very accurate and deadly (they expand great and penetrate deeply). Indeed, I'd confidently hunt elk with these if my big guns were unavailable. In the 270, I've settled on the Interlocs because of accuracy and partition like penetration. While the partitions will shoot moa out of my Tikka, the dependability and cost of the Hornadys get the nod.
As a side note, I try to shoot animals so they are DRT. I long ago concluded a few pounds of lost burger meat was a good trade for no tracking. Consequently, I try to take out at least one shoulder. As a result, it's rare an animal makes it more than a few feet if it moves at all. For the velocity envelopes I shoot within, these bullets are perfect for how I hunt (ranges are typically 300yds….but sometimes can be measured in feet).

I like your thinking on trading a few pounds of burger for knocking the animal down right away. It's a fair trade. Often the animal will jump the fence after the shot, and die on property the hunter doesn't have access to for retrieving the carcass. You lose ALL the meat when that happens. Then there are the ones who run down into some nasty old canyon, full of blow-downs & rocks. Now you have to pack it out of there. No thanks. I would gladly give up both shoulders to keep myself out of that situation. If you find yourself short of bambi-burgers, get a couple of doe tags and shoot more deer.
