Even Gordon Ramsay might appreciate this one!!!!Marinated it with strong dark coffee overnight. Patted dry, seasoned with sea salt, pepper, dried rosemary, and pan fried in beef tallow.

ButterI can't imagine a slab of upper choice/prime beef with anything other than coarse sea salt and freshly ground pepper.
I don't even like to cook it in a way that changes the flavor.!
I like cow. A lot. As it is.
Brother, you know I try to do my best. It has been a while the last time I have done, I figure, re-visit it for old time sakes. My late Dad cooked for his Admiral when retired from the Navy in 1965, and this way is apparently one of his favorites.Even Gordon Ramsay might appreciate this one!!!!
Carpaccio or pic #2For those that claim meat as-is, I do not have to cook mine.

Phil, I meant some butter on top when it's on the plate. It can be lightly seasoned or not.I use tallow for broiling but wifey likes butter as well.
Thats what my grandpa did. He cooked the best steaks on a red weber kettle. Put butter on top and served. You just took me back 50 years and I can smell and taste it right now. My dad did sometimes but he was a gas grill guy. Not the same.Phil, I meant some butter on top when it's on the plate. It can be lightly seasoned or not.
Reminds me of a couple of Christmas parties I went to as a kid with my parents in Montana. Big honkin' t-bones on webers... great steaks.Thats what my grandpa did.
