Sorry but I don't do or follow recipe ... I just wing it as I go along. :D Basically, I sauteed the ground elk with lots of garlic and onion, then seasoned it with cumin, chili powder, hot chili paste, salt, pepper, diced tomatoes, green chilies, hominy, mole sauce, and home made stock.

It will be topped with various condiments tomorrow like, chopped red onion, jalapeno, lemon/lime, cilantro, Mexican cheese blend, etc ...
 
I love Pozole! Never thought of using elk though. We usually use pork shoulder and cook if all day. Great stuff.
