A better approach for meat, although it is not for everybody, is to make jerky out of it. My wife and I have spoken about the canning of marinated meat in the past, the issue we have run into is the amount of salt, I need to be on low salt, my jerky process was in the process of modification to address this, need to get back on that.My goal is to learn how to can wild game. The idea you have food that doesn't rely on electricity/freezing appeals to me.
