Hey Feenix, I made it last week with Caribou shanks. The whole family loves it. I added a lb of mushrooms to the gravy, pretty tasty. Yours looks delicious too

I made osso buco with whitetail shanks for the first time this year. It takes some time but it still beats the hassle of boning them out for ground meat.
