Short action, Remington model 7 with a factory barrel, not sure on twist as its not my gun

Anything in the 140 class works with h4350 too. Some good monos if that's your thing. With a short action you won't be able to run the big 180s most likely.
Not 100% on the model 7 but I believe the factory twist is 9.25. The higher the elevation the less it will matter. There are lots of twist calculators out there you can verify stability with. I agree you should be in the 140-168 grain range. 175+ will start to be marginal.

I'm shooting 175gr eldx over reloader 26. 2900 fps out of a short action and it hits hard. Killed a couple deer with it last season and a bull elk at a far distance. He took two steps and tipped over.

What's your barrel length?
I have two saums. One is more geared towards hunting and the other for shooting steel. The hunting model is a trued 700 sa in a Mcmillian game warden. It loves the 162eld-x and rl23. Have killed white tails and pronghorn out to a little over 600 with it.

The best load is what your rifle likes the best. There numerous threads on here about the 7SAUM. You need to know your Twist rate.
