Is the difference in dies for the series based on the .308 case just in the insert? IE can I order the Redding Type S F/L die for .308 and order the appropriate insert for my .243, .260 Rem, 7mm-08?

I agree with MontanaRifleman - call or email Redding for a 100% answer. My experience with their service has been overwhelmingly positive.
If you are talking about type S full-length + bushing dies, I am fairly certain you cannot use one for the entire .308 case family. For example, the shoulder areas of a .243 Win vs a .308 win will be different. Both have the same case design, length, and taper to the beginning of the shoulder. Both also have the same shoulder angle. But, since the .243 has a smaller neck diameter, the length from the start of the shoulder to where it terminates at the neck is longer than the .308. I am pretty confident this would not allow proper shoulder setback if interchanging dies.
If you were to use Type-S neck only bushing dies, it MAY be possible to swap bushings and size both cartridges- BUT - The shoulder difference may still be an issue (ie interchangeability may only go in one direction, or even not at all). I'll completely defer to Redding on that one!

As a general rule, a "Type S" Bushing Die can be used to size cases that are 1 caliber larger and/or 1 caliber smaller than the cartridge that the Die is designed for, provided that the cartridges are otherwise alike (diameters, shoulder positions, shoulder angle, etc.).
I take that to mean that Type S for .243 could be used for .22 or .257 with the appropriate inserts, but not for what I thought might work. In any case look at the SAAMI specs in a manual to see that dimensions work for your case.
I just ordered the F/L for .243. I will need to order a second when/if I move up to .260 Rem or 7mm-08.
