Crazy 7mm build

That's going to be a nice build, and the velocity numbers your looking for aren't out of line.
I really like the saum, though I haven't been able to quite get the numbers your looking for. I've never been around any of the Sherman cartridges, but I'd be happy to change that situation.
Given you dont care about barrel life the wsm will get you closer than the saum and it's a great cartridge as well. A medium or long action helps them both out quite a bit.
I don't think you'll have room to take advantage of the bigger guys and see much for gains.
For 800 max you might look at the numbers on the 162's.
 
A 7 prc on the 300 case would be a nice catridge but so close to a stw or 28 nosler would it be worth the trouble?
A lot of people like the .530 case head and my improved version in the 30 SM will run with a 300 NM so I've had a lot of interest with head stamped ADG brass.
But it will be close to the Nosler performance wise. Just wont need a Lapua bolt.

I've become quite enamored of the 7mm-300 Win Mag lately, mainly because I accidentally acquired an Ackley Rem700 in that chamber. There's about a 60 page thread on that caliber on here. I also believe the 7mm Practical is quite similar to the 7mm-300WM.
 
I love my 7 SAUM. It's a Remington Model Seven SS with the factory 22" barrel. I'm getting 2950fps with 160 grain Accubonds @2.80". IMR7828SSC got me about the same velocity. H4831SC has proven to be extremely slow in every cartridge I've tried it in. The SAUM was no exception. Great accuracy, but about 200fps slower than my current setup. Partitions get me to around 2980fps.

I'm running a 22" Gunwerks Magnus 28 Nosler pushing hand loaded 175 ELD-X at about 3050fps. Gunwerks loaded 180 ELDMs were around 2950-3000 if I remember right. I'm loving my 22" builds for hunting! Don't let all the naysayers convince you you have to have a 26" barrel. You give up a little velocity with a shorter barrel, but these modern magnums have velocity to give.

The 7 SAUM is a great round, but you may have a tough time breaking 2900 with the 180s. I don't have as much personal experience loading it as the 28.
