I set out a layer of bacon, weaved together. Flattened a layer of venison on plastic. Placed the venison on the bacon and rolled it up
Season the venison as you like. I have done this with simple salt/pepper, another time with BBQ sauce inside, and used a bbq rub today sprinkled on the flattened meat before rolling it with the bacon

Rolled the ground meat on a cookie sheet with foil under out to about 1/4" and then flipped it onto the back weave, used 2 lbs, then rolled it up and let it all go to the smoker for a few hours.
