I would have to guess a 1-10 would be about perfect for the 180s at the lower end of your velocity range at 2300 fps.

What project you thinking about doing!!!

I would agree with Kirby, 1-10 is the way to go for the 180's. If you were never going to shoot heavier that 168's a 1-12 would work, but always better to overtwist than under.

A rather unique project actually. I want to custom make a muzzleloader on a bolt platform (rem 700 likely) with a .357 fast-twist barrel to shoot .308 bullets. It'll require custom sabots and other expenses so it'll be a year or two until I can do it, but it should be an interesting project.
 
What twist does it take to stabilize the SMK in the 165-180 weight range at a velocity of 2300-2500 fps?
Or does anyone know of a freely-available program or formula which would allow me to do these calculations?
