Removing old bedding material

I bought a used stock and am going to have it bedded to a different action. I have cleaned up much of the old bedding material with a dremel but wasn't sure about the recoil lug area.
How much should be removed here? Remove from front and back or front only?
 
I don't bed my stocks myself anymore, but when I did, I took out everything around the recoil lug mortise using a Dremel tool.

I will show my age: the first time I had a rifle bedded was in 1978. Gunsmith charged me $25.
