Where did you hit the doe ? Up high near spine ? Might be blood shot or ruptured blood vessels ?

The red spots are from blood. Maybe the shock the deer felt from the impact of the 6.5 CM magnum was too much for it. Seriously it is from stress/shock to the animal. I do work at a packing plant and know a little bit about it.
The picture in the second post looks to be liver. I definitely wouldn't eat something that looks like that.

I saw the first and only pic of a piece of meat. Didn't look l like a backstrap. Somebody mentioned pic of liver. I didnt find that. I forgot to unwatch. I'll see you on the other side !
