Processing knife set

I have a knife to gut and skin. When breaking down for the freezer it's all filet knives

Fillet knife and a long bladed havlon anything that can stay razor sharp for silver skin and vane removal

Have tried multiple sets but use a mix match of favorites out of a few like havlon and a benchmade meatcrafter love the shape and versatility
