Hornady 225 SST's for elk

I can get close to 3100 fps with my 340 Bee. Will these do for elk? I have quite a few in my cabinet. Any input?

I liken the SST to the nosler ballistic tip. Great for thin skinned game. I use barnes TTSX and accubonds for elk. I would go "bonded" on elk and save the SST for lighter game.
