Of all the dirt flavored crustaceans.... that one has to be the best marketed ones in existence. Potatoes and sausage look good.

There is a fair population of crawdads in certain streams and rivers in the PNW. They are not on many peoples radar though. During elk bow season, I used to catch some with string and a chicken bone and sometimes a wire trap. They were always a pleasant surprise on the elk camp dinner table.

That's awesome ! I caught them in Mississippi as a kid great eating!!
