I run 45 grains of Varget with the 168 and 178 AMax at a shorter coal than yours with no issues. Just an fyi.

I guess with me being new to loading as soon as I hear a grain crack I'm freaking out. So I shouldn't be too worried about compressing loads then? How much is too much? We are literally off by .025 lol

Same here.
44 grains Varget with 168 and 175 with no issues with compression.
155's shouldn't be a problem at mag length

In my 308, the 155g TMK shoots very tiny groups with the bullet seated very close to the lands, I could not get it to shoot sub 1/2" otherwise. I am shooting a very hot load of Varget and IMR XBR 8208 in Lapua brass with large primer pockets.
The Sierra 155g Palma is more jump-tolerant than the 155g TMK, in my experience.

MDT mag meaning AICS style mags would most likely need your feed ramp notched on your rifle if we're speaking about an older Remington 700. I'm speaking of the pre Remarms Remingtons. The new SA Remarms come notched from the factory.

Yeah then she'll need the feed ramp notched. If you're handy with a die grinder or dremel people have done it themselves. Or have a smith do it for you. I'd probably have it notched to use binderless mags at 2.950". But that's a personal preference.
Don't ever stop "worrying" when reloading as it keeps you sharp, focused, and safe.
Get a drop tube.
You should be fine with your charge but if you're "worried", reduce charge 1 grain, adjust coal, test and work back up.
When using the drop tube, do not just dump the powder in the funnel. Tap the powder in the funnel up near the rim, slowly. You will be surprised how far down the powder level goes.
In many cases, if you seat the bullet just on top of the powder, it is a sweet spot in accuracy, but trial and error rule the day.

A couple things you can try. First, try using a drop tube, varget will compress a bit. Might just get you where you want. Second, try seating just a bit shorter. Say about 2.825 or so. Most standard/polymer mags get picky when you load past 2.810. Third, you may need to modify your feed ramp. Remington 700 may require modifications to the receiver (i.e. notching out the bottom of the feed ramp) to prevent the bullet tips from catching on the bottom of the feed ramp. I've ended up doing this on a couple rem700 I've had in the past. Lastly, try a different metal mag. Polymer mags can constrain cartridge length. As an example, MDT has a couple of metal mags for aics use that come with either a binder plate or without the plate. 2.870 with the binder plate and 2.960 without. I use these in all my REM type 308 guns. Have fun and stay safe.
