For the more money:
Kimber 84M Hunter in stainless 6.5 Creedmoor or Mountain Ascent in a 308 Win stainless. Savage stainless weather warrior. Howa Alpine - light and easy to carry but shorter barrels lose velocity.
Tikka T3X Extra light Stainless - O2 Octane Camo
6lbs - 24" barrel stainless, Sub MOA, 6.5 Creedmoor.
If you want to build off of, Remington 700 stainless, ADL and convert it to BDL on the cheap torqued into a HS Precision stock. They shoot and group fine with reloads.
For a cheaper beater rifle, Ruger American Cerakote Bronze, with new AI type magazine $630 It is already camo'd up and cerakoted. Trigger tuning and work on the stock to re-enforce it / take off the muzzle device = not needed.
I would not get an AR10 as losing gas to cycle action and losing FPS behind bullet.
It depends on how you choose to hunt and is up to you. The AR 308's are sub MOA and capable. If you are looking at an AR 308 platform = Larue Tactical comes to mind and they are not cheap $$$$. You can put Nightforce on that and call it good. You will have a high end platform.
LaRue Tactical 22" PredatOBR 260 Rem.
Ruger American with AI magazine type. Not bad for a budget beater rifle with reloads sub MOA. You can spend the money on better glass if using this. You also can mount it in a MDT LSS chassis for upgrading over time.
$400 MDT LSS Chassis system.
Rings = Talley or Warne are fine.
Glass - that is where the money goes.... People have their favorites.
I am not a fan of using more than 10 - 12x out to 800 yards for a hunting rifle.
Past 800 yards a 14x - 16x works.
If I am going high end then we are talking about an expensive rifle platform and custom to minimize variables. The Larue platform is an example of spending $3000+ on a rifle; a Nightforce $2000+ is fine for it.
We are not counting pennies at that point.
Things will get broken and scarred up when used. I can live with that on accurate beater rifles more than I can on higher end gear. Broken high end gear gets me angry- bad mood. These are usually preventable mistakes that breaks gear.

Bolt gun for precision hunting big game. And you don't need or want a 15 lb target rifle. I'm the best shot with my little crappy factory rifles while hunting because I don't give a crap about them and I'm used to just whipping them up and taking a coyote or whatever comes up. Find a decent light rifle and shoot it tons until you don't know it's there when you have it.

I learned one IMPORTANT thing in my 10 of years of owning 30 or so custom rifles. BUY ONCE CRY ONCE. Prior to being enlightened, I bought factory rifle after factory rifle based off of "internet shooters"... I wish I never wasted money on substandard junk.. If I could rewind the clock.. I would have purchased the high end / high quality equipment to begin with. I would have saved a load of cash & a lot of time from right from the start. I chuckle at these fellas telling you to buy crap that they probably never even handled because it's on sale. I also laugh out loud about the guys who preach unreliability of the AR-10 / LR308 platform.. Take care of your kit & it'll take care of you! Keep it clean & lubed & you will appreciate what it can do for you. This thread got silly. I'm out! Good luck in whatever path YOU choose!
I always do tons of research before I buy anything, and I can wait for a deal. I never buy a gun I couldn't make money on...unless it's a build I plan on keeping.

If you look at the guys that are guiding and hunting for a living you won't usually see $5000 custom safe queens. You will see a solid workhorse of a rifle. I have found that theres a lot of guns bought for a status symbol by guys that only hunt a couple weeks a year. Those of us that actually use and abuse our guns day to day wouldn't feel right with a $5000 gun banging around in a truck or leaning against the shop wall by the door ready to go. To each their own. Buy expensive guns to feel good or buy a tool for the job.
I know what you mean. My favorite hunting show, fresh tracks with randy Newman, he uses a Howa 1500 .308 in all his shows.

I will edit the personal attack out, not professional.
The equipment doesn't make the man. Sometimes I use a lowly Savage Axis stainless stainless and Nikon! Sub MOA - 1/2" with reloads and it shocked me it could group that well as a budget rifle. I bought that Savage Axis stainless as a project to see how much work would it be to get it to shoot Sub-MOA as a challenge project. Sometimes we should go back to basics and focus on fundamentals.
If the platform is accurate- solid, tough. Good
If the Ammo in platform is 1/2 MOA in platform with velocity / energy = very good.
The Shooter - weakest link. So I don't buy into I have to use S&B or Nightforce for basic hunting work. I can live with treating budget rifles rough and scarring up a stock on falls and using medium priced glass that tracks & works.
Long Range is different.
I do like high end rifles. But they don't make the man. Sometimes we should challenge ourselves and force ourselves outside of comfort zones and boundaries where it makes you appreciate things more.
The reason I don't like AR 308's isn't because they are not reliable. They are reliable. They just weigh, cost $$$$ too much, have less FPS behind the bullet. It all depends on how you plan to use that platform. Hunting at 8,000ft+, no thank you. I will go lighter. If I am shelling out the $$$$ I can custom build.
I have carried EBR 308 platforms in combat for years. On my off time, I choose something lighter as deer and elk don't shoot back at you. I don't need a lot of ammo for hunting. If you build or buy ultralights, they are not $$$$ cheap either. If I am spending money, it is on glass. Some people use one high end optic and switch it on different rifles by quick attachment bases. YMMV
When you get caught in bad weather, a bolt gun is a lot easier to maintain and dry out - in a stainless action- care for. A Bolt gun is a simple design with less variables.
Tikka's, Ruger, Howa, Remington, Thompson, Savage, Kimber, Winchester, factory are plenty accurate out of the box. With hand loads and a little tweaking, they dial in nice and are plenty capable.
