Mallard duck for lunch: Marinated overnight with huckleberry whiskey, sriracha sauce, garlic, and tamari sauce. They are pan-fried with roasted garlic-infused olive oil, some greens, roll, and JW blue. YUM!

I was working at a restaurant when I was in college and a customer brought it to the bar. It was the bes tasting smoked meat I ever had. Wish I knew how to make it.
