building on a rem 700 sps varmit 308

I am working on my rem700 308 sps varmint all ive heard is junk the stock only problem is im left handed and like the bolt on the right side i want a lh thumbhole like a boyds but there out of stock as far as optics im leaning towards a millet lrs-1 illumanted looks like the most bang for my buck it will mostly be used for shooting at night but I am going to shoot on the bench to see how far i can go just in case i go out to west texas or kansas and have to shoot 500 or 600 yards. I will be hand loading all of my ammo and was wondering what a good bullet would be for all around hunting pig, yotes,deer etc any info will be greatly appreciated
