Anyone start canning yet

I tried to can tomatoes but it wouldn't fit.

My goal is to learn how to can wild game. The idea you have food that doesn't rely on electricity/freezing appeals to me.
A better approach for meat, although it is not for everybody, is to make jerky out of it. My wife and I have spoken about the canning of marinated meat in the past, the issue we have run into is the amount of salt, I need to be on low salt, my jerky process was in the process of modification to address this, need to get back on that.
