Anyone start canning yet

A guy I worked for, he and his wife made sweet pickles, we would trade. He gave me the recipe and man, it was a very long process but they were so good. I never tried the process
I've made blueberry and cherry preserves so far this year. In the next couple of weeks, I will can chow chow, 7-day sweet pickles, plums, peaches, pears, spaghetti sauce and ketchup

Bread and butter pickled eggs, dill pickled eggs and regular.
What are the mesquite beans like?? Never thought about those.
They are kinda like a cross between green beans and celery. Kinda hard to explain but mesquite trees are a legume like soy beans. Eat more than 5-6 and you will be looking for a roll of TP.
