I did this recipe using the meat from a venison neck roast. Turned out great.

That sounds good! Any cut with a lot of fat or collagen would benefit from this "low and slow" type of recipe. My cast iron was not as well seasoned as I had thought, so I do recommend using an enamel pan or other acid resistant dish with this level of wine, but the flavor is excellent.
