Midway has had the 210s in stock sporadically. I just set up an alert on their page to send me an email when they appear 'in stock'. They usually sell out in under an hour. I just timed it right one day and managed to get a couple of boxes. Will report back when I get a ways into load...
I just (on Saturday) got a couple of boxes of the Accubond LR 210s to start load development with. I don't have anything yet obviously, but I'll be curious to see what you come up with too.
I'm also shooting a Sendero (SFII) with a Viper FFP. :)
My Viper PST is FFP. I'm not totally sold on it yet. At max zoom, the reticle gets in the way a bit. If you were going to do a FFP, I'd make sure it has an ultra-fine reticle. It does take out some of the complexity though, when using the reticle for measuring or holds.

I currently have a Viper PST 6-24x50 on my 300 RUM and I couldn't be happier. It replaced a Huskemaw 5-20x50. The glass in the Viper PST is better in my opinion, as is the reticle. I had a hard time getting into the dedicated turret concept of the Huskemaw.....I like to tinker too much and...
I'm pretty excited about this announcement!! Love to hear when these will become available. The .308 210g is gonna get some serious testing in my RUM.

In case anyone else is interested and finds this thread:
I did email Vortex about this and they let me know that they do not believe the Alumina caps will work on the Vortex optic.

Jeff and Michael almost have me convinced.
Plan of action: Convert my 300 RUM to a 338 Edge and convince the missus to let me build up a win mag.

That about sums it up. You whack a deer in the rump with a 165g bullet from a .30-378 and you're losing enough meat that it might as well have been a 200+g bullet any way.
Plus, shooting the bigger (slower) bullets, you'll most likely extend your barrel life as well.

I actually find the recoil in my 300 RUM to be more harsh with 180g than 200g bullets. The recoil with the 180s is 'snappier'...harder on my shoulder. I'm about 190 lbs and my RUM doesn't have a brake on it. I shot 14 rounds at the range last night off of the bench and I'm slightly sore...
