I currently have 2 defiance actions sitting in my safe, trying to decide what caliber I should go for next. Currently have a .22lr, 22-250, .223, 30-06, 300wsm, and last but not least a .308… the actions are a short action with a standard bolt face, and a long action magnum…

Send them to us. We will chamber two great cartridges for you.
 
I went a long time before moving into the BR style cartridges, regretfully. I have since built numerous and have loved them all. A nice 6mm something would fill that void very nicely. My personal favorites are 6 Dasher and 6mm GT. Really fun to shoot, and havent seen one yet that isnt crazy accurate, and powder goes a long way.

If you have a place to shoot really long, I agree on the 300 WM or 300 PRC for the magnum long.

It boils down to personal choice/preference. As you can see below, you have a big gap to fill.

.22 cal = .22LR, 22-250, .223
.24 cal =
.25 cal =
.26 cal =
.27 cal =
.28 cal =

.30 cal = .30-06, .308 Win ,.300 WSM
.33 cal =

Hunting and target, recently found a range close to me that has 1 mile. Would be cool to shoot out to 1 mile but I'd like to get 1000 yards.
I do not care about the target part, but you must determine how far you can shoot at the game (i.e., antelope, deer, elk). "My" unwritten rule is 1500 FT-LBS for elk-size game and 1000 FT-LBS for deer-size game + > the recommended minimum velocity of the bullet at POI. Depending on your load for your .300 WSM, it can be a 1000Y elk chambering. Below is my current load for my .300 WSM.

I have 2 .300 WSMs, 3 .300 WMs, and a .30 LARA (improved .300 Jarrett), but the .300 WM remains my go-to chambering for antelope, deer, and elk up to 1000Y. Beyond that, I'd go with my .338 Thor (NMI). Good luck!
