IME having hunted every single terrain in N America and other countries, Merino wool! I don't care who makes them...if you buy great quality Merino socks they will outperform any other fabric type on the planet. High quality Merino socks should be in the price range of around > 20 bucks per pair or so. Thickness is a personal thing. Personally, when hiking and spot and stalk hunting, I wear very thin socks cause I run hot and my feet sweat. I also prefer to have a bit of room in my boot for late in the day as my foot swells from hiking. Sitting in a spot for a while, maybe not walking much or riding horses, I might go with a mid weight sock to match my heat generation and insulate my feet a bit more. Second to buying Merino is proper care - wash them in Merino specific detergent. Nickwax, Kookaburra and the like. It preserves the wicking and resiliency over time. Regular laundry detergent is terrible for wool.
