Use accuracy loads from Nosler reloading manual. 1 1/4" @ 200 with both out of custom .243 winchester 1x10 twist. H4895 is around 4000 fps and Varget load is around3600 fps. Varget load is similar to 22-250 velocity with 55 grain bullet. :D

Both shoot. If you are going to build a custom and use the actions I use the Remingtons. I've seen both in customs that shot really GREAT, but you cant put a Jewell trigger on a Savage.:D

87 vmax for 1x10 twist. If your twist is 1x9 you might try Hornady 87 bthp. Harder bullet and works on deer.:D

If you want a "walking rifle" I would get a .243 win in a #3-4 weight barrel. Fur friendly would be your .223 rem or new build in #3-4 weight barreled .223 AI. If you're young get a heavier barrel in light weight varmint configuration.:D

I load for 9 different cartridges 2 of them are AI's (6 AI and 223 AI) these and my other 2 custom guns(in .243) are my most accurate guns.
