wild boar ribs german style

get a couple meaty boar racks.
in a aluminum serving tray place ribs 2 or 3 packs well washed and drained sauerkraut
sliced onions
celery seed
dill and a handful of peppercorns
place ribs on top
pour in 1/2 bottle white wine(reisling)
tightly cover entire tray with foil and be sure to crimp/tighten edges
place in 225 degree oven for 4 -5 hours until ribs have been done to your liking
my family loves the fall off the bone method so the whole mess can be scooped into a dish(closer to 5 hours)
four if you want to work em a little
serve with wild rice ( dirty)

That sounds like a really tasty dish!! I've had Wild Boar ribs BBQ and they where great. Also, the Bacon from a Wild Boar is like no other Bacon I've ever tasted. My son and I shot a couple of Boars and brined and smoked the Bacon and Hams. They where real good. Next Boar I shoot I'll give your recipe a try. gun)


I like one shot kills where possible and prefer to do all my hunting before I shoot. Elmer Keith

So we put sauerkraut on top of one layer of ribs and another layer of ribs on top of the kraut?
