I have an early 1990s Remington M700 ADL in 270 win. I'm thinking of building a semi custom rifle using the action and was just wanting to know what my options are with this action?

Without opening up the bolt face, you can rebarrel to just about anything based off of the '06 and 308 cases.
In other words, if it's got a .473 bolt face, you can build it.
And, with a little more effort, you can open the bolt face or swap the bolt to permit most magnums. ...notwithstanding the possible need to enlarge the magazine or make it a single shot.
In order to narrow the field... What would you like to use the rifle for?

I'm having a 300WSM built on my old Win Model- 70 30-06.
It. Requires opening up the bolt face, & playing with the rails, but to have a long action WSM is freakin Awesome!
J.E. did a post that's now a "sticky" in the gun smith section on bolt face diameters, & smart options. It's definitely worth a look!
Sky is the limmit on standard length long action rounds, or short action rounds on that action tho.
RUM, & STW Length may not be possible, but I don't know that for certain.
There are quite a few excellent smiths here on LRH. My advise would be to call a few, or p.m. a few of them for specific answers.

"coyboy" Jim See (Centershot rifles)
"fiftydriver" Kirby Allen
"Shawn Carlok" (Defensive Edge)
"J.E. Customs"
& the latest LRH sponsor/gunsmith making a really great name for himself "grit".
Any or all of these guys, and more come to mind. LRH has some Excellent sponsors. Id feel confident using any of them.

270 Win is great for deer and even Elk out to a few hundred yards.
So, maybe you just need a tune-up rather than a rebarrel?
6.5x284 is my favorite in the same category, but with better bullet choices for long range targets
ditto for 260 Rem
260 Rem may have better barrel life than 6.5x284, but it really comes down to how you load your ammo and whether you're kind to the rifle
if you really want to shoot Elk past 300-400 yds, you should start considering 7mm Rem Mag and up. But, this is where you start needing to open the bolt face and magazine length...
7 RSAUM and WSM are nice rounds with moderate recoil and excellent ballistics
300 Win Mag and WSM are going to be slightly better for long range Elk
the 338's are nice for extending your range and energy, but they have their drawbacks as well

35 wheelen, 338ai, 30-06, 280, 280ai, 270, 6.5-06(wildcat), 25-06, 240 weatherby, You have a long action so why play with short action rounds. You could put a mag bolt in or have yours worked over, but a new one is around $300, and a work over won't be much less.

About 400 fps slower on a 225 grain. It will do 2971 fps with a 180(nosler#6), but the 225 has fallen to 2595 fps (nosler#6) with top loads. It looks like a-square standardized the 338-06 with the standard shoulder, but in that cal., it won't make much difference because there isn't much shoulder. My brother has a 35 wheelen and is very fond of it, but it's your call.

338-06 will run within 200 fps of a 338Win Mag with a 225 gr bullet.I really thought hard about that one.
A square, Ackley Improved, whatever, its a badass cartrige!

By the way there's nothin wrong with the good ol 270. That is my personal minimum for Elk, & I've seen a bunch of Elk fall to them. I have a bunch of cousins who hunt exclusively with 270's, & do well with them.
Now I'm not saying smaller cartriges/calibers won't work. I've seen them work on Elk. But I've also seen Elk soak up a lot of lead, with good shot placement, from a lot bigger guns & keep going for a surprisingly long way before expiring. That is why my personal minimum is a 270. It just works. From a 140 Accubond on the light side, to the heavy 160 partition, they kill Elk.

280AI was my first rebarrel and it was a rebarrel of a 270. It always goes with me on any hunt from Antelope to Elk, might also carry a 6.5 on the Antelope hunt or a 338 on the Elk hunt, but the 280AI can and has done it all.
160 gr at 3000 fps will get it done

I've got a rather fast 338win. It's a ruger #1 and it'll do 2900 with a 225 hornady and rl19 all day long. It is still at least 150 to 200 fps below the ultra and the lapua though. It depends on whether you want range or thump. Range, I'd go 25-06, 270 or any of the 280's. Thump, I'd start looking at 30-06 on up. The 30-06 is the most versitile of the whole bunch, but others do have definate advantages.
IMO, do not waste your money on "bolt face or extractor" mods. It is a waste of money today.
Just buy another bolt from Pacific Tool and Gauge with correct bolt face and upgraded extractor. It can be ordered sized for your internal receiver dimensions and is a lot better functionally and $ wise. Can ordered fluted and different type bolt handles.
Sell your old bolt for $100-140 to offset the cost.
Way ahead money wise and better functionality!!! That is irrefutable.
