Spring Black Bear with 7saum

I punched my eastern Oregon spring bear tag with my new 7saum.
Not super long range but hammered this old
sow at 325yds.

Will you be eating the meat from "this old sow"?
I've tracked and photographed countless black bears but never killed or eaten meat from one. An acquaintance who is a hunting guide once told me there's almost no way to make them palatable.

Yes, I packed out the hind quarters and backstraps. The front shoulders were pretty well demolished and I left them.
I have eaten "spring bear" and although super lean is very palatable. We actually mix pork or pork fat into it to make sausage. Because of trichinosis you have to cook the meet to 165 I believe. Eating an over cooked bear steak isn't all that appealing to me so we typically do some sort of sausage.
I have no experience with fall bears, those mite be very well unpalatable depending on what they have been eating.
 
I have only eaten bear meat from bear we killed in Central B.C. Canada. Just South of Smithers. All bear were very good eating. I've yet to take one in Oregon, but I would assume the meat to be very good to eat. I do have a friend that took a bear in Alaska. It was taken near a dump site. He said he couldn't eat the meat. It was bad.

What powder are you using? I'm building one on a Tikka action as well, should be here any day now. Getting excited to get it going.
