Bullet for 7 WSM?

In an 8 twist 7mm WSM which would be a better choice for long range target shooting 600-1000 yards? 175 SMK or 162 A-max?

Either one. They are cheap enough and readily available. Shoot both and see which works best. Other choices would be Bergers or JLKs in 168 or 180 grs. Wildcat RBBTs would be another choice.
