The Berger classic hunter will work well for what your looking for. We used in .308 150gr and in 6.5's 135 grat the 2900fps range with great success. But if meat damage is a concern they really do some damage.
Never heard of 2 weights of the same bullet being harder or softer than the other, I think that's just a difference in the velocity they are shot at.
Nosler BT are one of my all time favorites. I shot more game than I can count with them in a bunch of calibers. They are a great bullet for deer and will fit the niche your looking for
