What bullets are best for lower speed expansion for 1000 yard shots?

I'd look to the Barnes LRX or Bergers.

Sierra TMK, Hornady ELDM, and Berger Hybrids would be my vote. All of those still expand very reliably under 1800fps and also have good BC to help retain velocity at that distance.

Heavy for caliber versions will serve you well too for those shots that end up being much closer.

The Cutting Edge Lazers are advertised to perform down to pretty slow velocity, some down to 1200 fps.

At last my count, there are 6 different 7mm Magnum cartridges.
Or 6 different 7mm cartridges with the term Magnum.

Assuming the 7mm Rem Mag, then the 150gr ABLR with it's 1,500 fps expansion requirement would just work. Barely.
Depending upon your muzzle speed & atmospheric conditions.

Realistically 800 yards would be about the limit for reliable expansion for the Rem Mag with almost all bullets.

180 eldm. 2850fps mv at 4000 ft. 1050 yards 1800 fps 1300 ft-lb

increasing mv or Altitude extends the range.

I was going to use my Strelok Pro to throw some numbers for different bullets into the mix.
But Strelok is on the new sanctions list and mine won't download any info for bullets.

Bergers & Sierras have worked well for me out to 800
