If any of you have ever wanted to try your hand at making tamales, this is a delicious way to use up many of the less desirable cuts. Give it a try, it's no easy task but the results are delicious.

 
FYI, in many Mexican grocery stores they sell the Masa prepared already. You just need to season in.

My mom would add some of the red chile sauce, some lard and salt to it for better flavor and color.

The key is to drop a bit of the Masa in a cup with water and it has to float.
 
I love homemade tamales but I grind all the less desirable cuts. I may have to try it with a neck roast or shoulder, smoke it in the pellet smoker and then finish it off in the crockpot.
